During a week-long culinary heritage programme, he will present traditional Himachali dishes, highlighting the state’s unique food culture, indigenous ingredients, and centuries-old recipes on one of the country’s most prestigious platforms.

    Describing the opportunity as one of the greatest honours of his career, Chef Nand Lal said he feels deeply humbled and grateful to represent Himachal Pradesh at the highest level. He termed the initiative a significant step towards reviving the state’s forgotten culinary traditions and introducing them to newer generations.

    “This is not just a personal achievement but a proud moment for every Himachali who has worked to preserve our traditional food and culture. Every dish I prepare will reflect the essence of our mountains, the wisdom of our ancestors, the purity of our local ingredients, and the warmth of Himachali hospitality,” Chef said.

    Chef Nand Lal added that the culinary heritage sessions will focus on promoting authentic Himachali cuisine, many of whose traditional recipes are gradually disappearing from everyday kitchens. The story of Chef Himanshu Pandey and Chef Vinay Kapoor is a remarkable tale of friendship, perseverance, and a shared passion that has taken them from the foothills of the Himalayas to the vibrant culinary landscape of Las Vegas.

    Their journey began at the prestigious Institute of Hotel Management (IHM) Pusa, New Delhi, where two young aspiring chefs met with a common dream to leave their mark on the world of hospitality. While mastering the art and science of culinary excellence, they built a friendship that would become one of the most important ingredients in their success.

    After graduation, both chefs embarked on their professional journeys, gaining experience with some of the industry’s leading hospitality brands. Yet, despite the demands of their careers, their friendship remained as strong as ever.

    Fate brought them together again at The Leela Ambience Gurugram, where they worked side by side in one of India’s finest luxury hotels. Beyond the busy kitchens and long working hours, they created memories that still bring smiles today. Among the most memorable was their daily ride to work, with Himanshu picking up Vinay on his scooter. Those rides became more than just a commute they were moments filled with conversations about ambitions, challenges, opportunities, and the future they hoped to build.

    What makes their story even more unique is their shared connection to the Himalayas. Chef Vinay Kapoor, from the scenic Kangra Valley of Himachal Pradesh, carries with him a deep appreciation for the rich culinary traditions of Himachali cuisine. Through his work, he champions local ingredients, traditional recipes, and the authentic flavors of the mountains.

    Chef Himanshu Pandey, from Uttarakhand, is equally passionate about preserving the culinary heritage of his home state. His commitment to showcasing the distinctive tastes and traditions of Uttarakhand reflects his belief that food is not merely nourishment but it is culture, identity, and storytelling.

    In 2022, a new chapter began when Himanshu moved to the United States in pursuit of greater opportunities. As his career progressed, he recognized that the journey would be even more meaningful alongside a trusted friend and talented colleague. Believing in Vinay’s abilities and work ethic, he helped create an opportunity for him in the U.S., bringing their partnership full circle.

    Today, the two chefs work together in Las Vegas, one of the world’s most dynamic hospitality destinations. Thousands of miles away from their homeland, they continue to support one another while sharing the flavors, traditions, and hospitality of India with guests from around the globe.
